Pancakes

Turns out, pancakes out of the box are pretty good. I am happy to have learned that while filming the episode. I love pancakes. So much so, that I wrote a short film based around the recipe that I use, you can find that here.

My best advice if you want something even more simple than the Full Measure recipe is to use the same method for adding the lemon zest to the milk and using the rest of the box mix recipe. Either way, you’re going to end up with pancakes and thats a good day.

Box Mix Recipe

Credit: Bisquick Box Pancakes
Time: 15 Minutes
Servings: About 8 (14 if you make small)

Ingredients

  • 2 cups Bisquick Box Mix

  • 1 cup whole milk

  • 2 eggs

Equipment Needed:

  • Mixing Bowl

  • Spatula

  • Pan

Method

  • Preheat nonstick pan or skillet, water droplets will dance and disappear when ready

  • Mix all ingredients together

  • Pour a small amount of batter onto the cooking surface

  • Cook until edges are dry

  • Turn and cook until golden

Full Measure Recipe

Credits: BA’s Best Mac-N-Cheese
Time: 45 Minutes
Servings: 4

Ingredients

  • 1 Cup All-Purpose Flour

  • ¾ Cup Whole Milk

  • 2 Tbsp lemon juice

  • Zest of half a lemon

  • 2 Tbsp Sugar

  • 1 tsp Baking Powder

  • ½ tsp Baking Soda

  • ½ tsp Salt

  • 1 Egg

  • 2 Tbsp Butter, Melted

Equipment Needed:

  • Mixing Bowl

  • Spatula

  • Nonstick or Griddle

Method

  1. Microwave the milk for 1 min or until lukewarm

  2. Combine milk, lemon juice, and zest in a small bowl and let sit for 10 min, this will make the milk appear curdled, fear not

  3. Sift all dry ingredients together into a bowl

  4. Pour wet ingredients into dry and mix until just combined, small clumps of flour are ok, do not over mix

  5. Preheat pan/griddle until a drop of water will dance across the surface and evaporate

  6. Portion some batter onto the cooking surface

  7. Turn once bubbles form and edges appear dry

  8. Continue cooking on other side until golden brown

  9. Serve immediately or hold in an over set to its lowest temperature
