Hot sauce is something that a lot of people get very opinionated about. They all think they have the secret to the best hot sauce. They also somehow think that everyone else is wrong about the perfect hot sauce. Well… they are all wrong. I have the secret to the best hot sauce. Obviously.
Full Measure Hot Sauce

Ingredients
300 grams pineapple
275 grams bell pepper
112 grams chipotle in adobo
75 grams carrot
50 grams jalapeño
45 grams habanero
35 grams garlic
35 grams ginger
8 grams kosher salt
8 grams sugar
256 grams (2 cups) white vinegar
Equipment Needed:
Blender
Method
Peel/core pineapple and rough chop
Peel carrots and rough chop
Peel garlic
Rough chop jalapeños
Remove the seeds and membrane from habaneros
Place all measured ingredients into a high powered blender and blend on highest setting for 3 minutes
Strain through fine mesh sieve
Place into dasher bottles, quart containers or preserve
